FOOD RECIPES : CINNAMON ROLL CAKE (5 STAR!!)

CINNAMON ROLL CAKE (5 STAR!!) Food Recipes,
Oh my goodness, this cake is beyond perfect. It has that wonderful taste that you only find in the "center part" of a good cinnamon roll (does that make sense?). The first time I tried it, I was compelled to close my eyes and savor it in complete silence...it was THAT good.

The cake is quick and easy to make and it is one of those great recipes that tastes good (even better) on day two and three (if it lasts that long).It would be a big crowd-pleaser for ANY occasion.
2 1/3 cups all purpose flour
1 tablespoon baking powder
3/4 teaspoon salt
1 1/2 cups granulated sugar
1/2 cup butter flavored Crisco (see note)

Put the above ingredients in the food processor and process until the mixture looks sort of like wet-ish sand. Remove from food processor and place in mixing bowl.

To the above mixture, add:

3/4 cup vegetable oil
4 whole large eggs
1 cup sour cream
2 teaspoons vanilla extract

Mix everything just until smooth, do not over mix. I did this with an electric mixer on low.

In a different small bowl, combine 1 cup brown sugar and 1 tablespoon of ground cinnamon, set aside.

Grease and flour a 9" x 13" GLASS baking dish. Put half of the cake batter in the prepared pan. Sprinkle it with 2/3 of the brown sugar-cinnamon mixture, then top with the other half of the cake batter. Gently swirl a small knife through the batter, making sure that you don't scrape the bottom of the pan.

Sprinkle the top of the 2nd layer with the final 1/3 of the brown sugar-cinnamon.

Bake in a preheated 325° oven (yes, that is 325°) for 50 minutes or until a toothpick tests clean (don't over bake).

Remove from oven and let the cake sit for 15 minutes, then drizzle frosting glaze over the top of the hot cake (leave the cake in the pan).

GLAZE

2 cups confectioners sugar
4 tablespoons milk
1 tablespoon vanilla extract

Whisk till smooth and drizzle over hot cake.

Keep this cake in the baking dish, just make sure you cover it tightly with plastic wrap AFTER it is completely cooled.

This cake is beyond moist and delicious on day two and three.

NOTE: The recipe calls for butter flavored Crisco; I have no idea how the batter/cake would turn out if you used something else, (sorry).

CROCKPOT SHORT RIB TACOS Food Recipes, The next two weeks are very busy "baking" weeks for me, how about you? I've made three different kinds of jam to put in gift baskets, and now I'm starting the fun stuff like cookies, breads and a gingerbread house.

While I'm happy to be in the kitchen, I'm not as happy about cooking real food (like dinner), so my crockpot is getting a workout while I have fun baking cookies.

Today's post came about the other day when I had some BONELESS beef short ribs thawed out and I had no clue what to do with them.  I decided to make boneless short rib tacos and they were SO GOOD, I will definitely be making these again!!
Start with 2½ pounds of BONELESS beef short ribs. I'm sure every butcher shop has their version, but the ones I use look like this and they are about 1/2" thick:

In a small cup, mix 3 teaspoons of chili powder, 1 teaspoon of ground cumin (don't leave that out), 1 teaspoon of salt, 1/4 teaspoon of black pepper, 1/4 teaspoon of oregano and 1 tablespoon of dry onion flakes. Mix well and sprinkle both sides of the meat evenly as possible (no need to brown the meat). 

Put the seasoned meat in the crockpot and top with a 4 ounce can of undrained mild green chile's (I use Ortega).


Cook on low for 6 hours or until they are fall apart tender (it really depends on how thick the meat is). Don't add any liquid.

Remove the meat from the crockpot and cover with foil to keep warm for a few minutes. There will be about a cup of broth in the bottom of the crockpot...thicken it and coat the meat with the "taco gravy". Each boneless short rib makes one awesome taco!!

The leftovers (sliced on the bias) made fantastic grilled beef and cheese subs.

FOOD RECIPES : BEST MEATBALL SANDWICH EVER !!

BEST MEATBALL SANDWICH EVER !! Food Recipes, This meatball sandwich is heavenly; it is rich, satisfying and total comfort food....so, live a little and ignore the calories on this one. The aroma of these meatballs, simmering in the sauce, will pull (even the pickiest eaters) from all corners of your house.

For the full size sandwiches, use hogie rolls, or for a crowd, small dinner rolls make great meatball sliders!!


This recipe will feel a crowd, so if you are just feeding the family, cut it in half. Better yet, make the whole recipe and mix the leftovers (the next day) with pasta and parmesan!! I love "day two" recipes.

MEATBALLS
2 pounds of lean ground beef (90% lean)
1 cup dry breadcrumbs (toasted under broiler)
4 tablespoons fresh parsley (minced)
2 cloves minced garlic
1 cup chopped onion sautéed
2 eggs
2 teaspoons salt
½ teaspoon black pepper

Sauté chopped onion and garlic until the onions have mellowed and become a little sweet. Mix them in with all of the other meatball ingredients. Form into 2” meatballs and place on a cookie sheet (that has a rim) and bake at 350° for 15 minutes. Remove from oven and drain. Set aside.

SAUCE

Even if you cut the meatball ingredients in half...do not cut the sauce in half. You can make this sauce on the range or in the crockpot.

In large deep pan, sauté ½ cup chopped onions and 1 clove garlic until the onions are translucent, and then add

(1) 15 ounce can of tomato sauce
(1) 12 ounce can of tomato paste
4 cups of water
1 teaspoon of dry oregano
1 teaspoon of dry basil
1 teaspoon of salt
1 tablespoon of sugar
½ teaspoon of black pepper
½ teaspoon of fennel seed
¼ teaspoon of dry red pepper flakes

Bring to a boil and stir to thoroughly mix everything. Reduce heat to a simmer and put meatballs in the sauce. Simmer for 2 hours (or see crock pot directions below).

TO SERVE: split your bread roll and put just a skim of butter on the cut side and toast it (for just a minute or so) under the broiler. Remove and load with meatballs and mozzarella cheese and put back under the broiler to melt the cheese. Enjoy!!

CROCKPOT DIRECTIONS

The recipe ingredients are the same, except use 4 cups of hot water and cook on HIGH for 5 hours. Lay a dish towel over the crockpot lid (to insulate it a little, so it will come to a simmer quicker). Once it comes to a simmer, remove the towel and crack the lid open just a bit so that the sauce will reduce a little.

NOTE: The secret to this recipe is the length of cooking time. The meatballs taste AND texture will be SO MUCH better if you cook for the full amount of time, that's why the crock pot is the perfect method to make these sandwiches.

TOP 10 COMFORT FOODS Food Recipes, My mother used to say, the older she got the faster the years went by; now I know she was right !!  It seems like, just the other day, I was reminding myself to write 2011 on my checks; where did this year go ???

I looked back through my 101 posts for this year and tried to pick out the all time best ones (it wasn't easy), so I decided to narrow it down to OUR TEN FAVORITE COMFORT FOOD RECIPES.  I hope you enjoy them (

This is a favorite of our grandchildren. Light as air and full of big air pockets that hold melted butter and jam, these are inexpensive, super easy and sure to please.




This is one of those busy day recipes that EVERYONE loves. The raw  noodles are cooked right in the sauce, so they are loaded with flavor. This one is a real keeper.

Glazed donuts are fun to make on the weekends. They put grocery store donuts to shame !!

You can make this pie a day or two ahead of time if necessary.
 It is a MUST for peanut butter lovers.

#6.  RED RICE

Some recipes are just for me. Picky-picky husband wouldn't even think of giving this recipe a taste (it has red peppers in it), but it is one of my all time favorites. IF you have any leftovers (which I seldom do with this recipe) it makes a wonderful lunch the next day.

We have always enjoyed sloppy joes, so I decided to try and make an upscale version that I could serve to company; the result was fantastic. Everyone loves this recipe of lean chuck roast cooked in the crockpot with sloppy joe seasonings. It is comfort food at its best !!!

This unassuming little sponge cake is a true winner. It can be used for a zillion
different recipes. It is light as air and makes the perfect shortcake.

The NUMBER ONE comfort food recipe of the year HAS to be this Mexican pulled pork and pinto beans (done in the crockpot); I serve it over rice.  Not only is it super easy, but it is ultra-flavorful and the leftovers make outrageous burritos !!
